Banana Bars with Spiced Cream Cheese Frosting

Try something new with those ripe bananas on your counter! These quick and easy bars with gently spiced cream cheese frosting will convince you to have a little dessert with your breakfast šŸ˜‰

Ingredients

Banana Bars:

  • 4 tablespoons unsalted butter softened
  • ¾ cup sugar
  • 2 very ripe bananas
  • ½ cup sour cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Spiced Cream Cheese Frosting:

  • 4 oz cream cheese softened
  • 4 tablespoons unsalted butter softened
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg
  • 2 cups powdered sugar

Instructions

Banana Bars:

  1. Preheat your oven to 375 F, and spray a 9×13ā€ pan with cooking spray or line with parchment paper.
  2. In a large bowl or mixer bowl, beat together the butter and sugar on medium high speed for 1 minute, until light and fluffy.
  3. Add in the bananas (no need to pre-mash them!), then mix on low speed, or until mashed and mixed together. Add in the sour cream, egg, and vanilla extract and stir to combine.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Add ½ of the flour mixture into the banana mixture, stir just slightly, then add in the rest and stir to combine. Don’t overmix!
  5. Pour the mixture into your prepared pan, and spread evenly in the pan. Bake for 12-14 minutes, or until the top is slightly moist and a toothpick comes out with just a few crumbs. Let cool while you make the frosting.

Spiced Cream Cheese Frosting:

  1. In a large bowl or mixer bowl, beat together the cream cheese and butter on medium high speed until combined and fluffy, about 1 minute.
  2. Add in the vanilla extract, salt, cinnamon, cloves and nutmeg. Stir to combine.
  3. Slowly add in the powdered sugar, then beat on medium speed for about 1 minute at the end to combine and fluff the frosting up. You can add more powdered sugar if you’d like the frosting to be stiffer (for piping), or a little bit of cream if you’d like it thinner.
  4. Once the banana bars have cooled completely, frost with cream cheese frosting.
