Roasted Carrots and Feta Dip

Roasted Carrots and Feta Dip


  • 1 bunch carrots with greens or 1 lb standard or baby carrots
  • 1 tbsp oil olive, avocado, or coconut
  • 1/2 tsp garlic powder
  • 5 oz feta cheese
  • 1 cup plain greek yogurt whole fat
  • salt and pepper to taste


  1. Preheat your oven to 375 F. Line a baking sheet with foil.

  2. Trim the greens from your carrots, if applicable, and scrub your carrots clean. No need to peel them! Place them on your prepared baking sheet, then drizzle with oil and sprinkle with garlic powder, salt and pepper.

  3. Place the pan in the oven and roast for 30-40 minutes, until the carrots are as tender as you like them.

  4. For the dip, combine the feta, yogurt, and a bit of salt and pepper in a food processor or blender. Puree until you achieve your desired consistency. Some feta chunks are yummy when left, but a smooth, creamy dip is delicious as well!
