Ingredients
Banana Bars
- ½ cup (1 stick) unsalted butter, softened
- 1 ½ cups sugar
- 4 overripe bananas
- 1 cup sour cream
- 2 eggs
- 2 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
Browned Butter Cream Cheese Frosting
- ½ cup (1 stick) unsalted butter
- 8 oz cream cheese, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 4 cups powdered sugar
- Heavy cream, if needed, to thin
Instructions
Banana Bars
- Preheat your oven to 375 F, and spray a 9×13” pan with cooking spray or line with parchment paper.
- In a large bowl or mixer bowl, beat together the butter and sugar on medium high speed for 1 minute, until light and fluffy.
- Add in the bananas (no need to pre-mash them!), then mix on low speed, or until mashed and mixed together. Add in the sour cream, egg, and vanilla extract and stir to combine.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add ½ of the flour mixture into the banana mixture, stir just slightly, then add in the rest and stir to combine. Don’t overmix!
- Pour the mixture into your prepared pan, and spread evenly in the pan. Bake for 12-14 minutes, or until the top is slightly moist and a toothpick comes out with just a few crumbs. Let cool while you make the frosting.
Browned Butter Cream Cheese Frosting
- In a small saucepan, add your butter and cook over medium low heat. Once melted, gently move the pan to swish the butter around gently. Continue cooking over low heat until it starts to foam slightly, then eventually begin to darken in color. Cook for about 5-8 minutes, or until the butter starts to turn a light brown color. Remove from the heat and let it cool to room temperature. You want it to be the temperature of softened butter before moving on to the next step, so you can even chill it in the fridge then let it sit on the counter for 10 minutes to soften.
- In a large bowl or mixer bowl, beat together the browned butter and cream cheese on medium high speed until combined and fluffy, about 1 minute.
- Add in the vanilla extract and salt. Stir to combine.
- Slowly add in the powdered sugar, then beat on high speed for about 1 minute at the end to combine and fluff the frosting up. You can add a little bit of cream, if needed, to thin to a spreadable consistency.
- Once the banana bars have cooled completely, frost with cream cheese frosting.
